The contrast pin is Vo. On many character displays, it is pin three or two. The other pins are for data, R/W and other functions.

Yes. VFD (https://en.wikipedia.org/wiki/Vacuum_fluorescent_display) have been around for 50 or 60 years and are still used thanks to their brightness and sharp contrast.
