A graphic display would work, but requires more programming (firmware). A character LCD would serve the same purpose. It has a built in IC (controller/driver) with a character table that makes it quick and easy to program.
It is a monochrome type of LCD and requires very little current without the backlight. They are standard products and in stock with a low probability of being discontinued. This means you could have your prototypes in a matter of days and not worry about it going obsolete after a few years.
