What is the best interface for a segment LCD?
What is the best interface for a segment or custom segment LCD? Is it a 4:1 mux or 1:1 mux or spi?

I don't think there is any one 'best' interface for any LCD.
The lowest cost interface for a segment display is a 4:1 mux, this means there are sour segments tied to one pin. There is no controller, so your product will need many I/Os or you can integrate using a microchip or nxp or other chips.
It is easier to use a SPI interface, but this will add up to a dollar cost per unit since the display now comes with a controller.
